One of my comfort foods (besides my Mom's cookin) is Cowboy Casserole. I edit the recipe though accordin to what I have on hand.

Crockpot Cowboy Casserole
Ingredients 1½ pounds ground beef, browned and drained 1 or 2 cans potatoes, according to preference onion powder, to taste garlic powder, to taste 1 can light red kidney beans, drained and rinsed 1 to 2 more cans of veggies (peas, green beans, corn, carrots, your choice) 1 (14 oz) can diced tomatoes, undrained 1 jar salsa con queso ¼ cup water Salt and pepper to taste 4 oz shredded cheddar cheese
Instructions Brown & drain ground beef Add salt, pepper, onion powder, garlic powder. Add cans of kidney beans, diced tomatoes, veggies, queso and water. Cover and cook until desired tenderness & preference. Sprinkle cheese on top of dish and cover again until cheese is melted.

I have to go for a dessert as my favourite comfort food, apple and blackberry crumble with creamy custard.

Ingredients
3 eating apples, peeled,
Quartered and cored
2 Bramley cooking apples, peeled
Quartered and cored
2tsp cinnamon
100g demerara sugar
300g blackberries
175g plain flour
1tsp cinnamon
140g soft brown sugar
35g porridge oats
180g cold unsalted butter
Method Put the quartered apples in a bowl and shuffle them around to mix them up a bit. Mix the cinnamon with the sugar in a separate bowl. Put half the apples in an oven dish and sprinkle with a third of the sugar mixture. Add the blackberries and sprinkle with the second third of sugar mixture. Cover with the remaining apples and add the remaining sugar and cinnamon mixture. To make the crumble topping: Put the flour and cinnamon in a bowl and mix well, then stir in the sugar and the oats. Cut the butter into small cubes, add to the mixture and rub it in with your fingertips until the mixture is the texture of breadcrumbs. Lay the crumble mixture on top of the fruit. Preheat the oven to 170°C, gas 3 and bake the crumble for about 40 mins. Keep an eye on the top. The sugar should go golden, not black. Serve with homemade custard.
I don't cook with an exact recipe, but : caramelized onions + pumpkin + broth + chili pepper (red Yunan paper for me) + peanut butter (several tablespoons)
That's one of my go-to soup!
It even makes a fancy hors d'oeuvre for the apéritif, serve in a tiny glass and add a little spicy peanut brittle.

The concept of comfort food is a bit alien to me; I’m on medication that often makes me nauseous and I’ve never been much of a foodie anyway. XD In any case, I’d have to say my favourite foods are pasta, pizza and salmon (grilled, smoked, in sushi or chowder...). And sweets go down a treat! xD
I would have to say home made chicken and vegetable soup with fresh bread from the bakery with butter.

Packet of chicken drumsticks or thighs. Brown meat is better. Cover with water and cook in pot till tender with salt, pepper, 2 tsp minced ginger, 1 tsp minced garlic, 1 packet of chicken noodle soup and some soup mix.
When cooked remove from pot and cut into small pieces - return to pot.
1 large onion, 4 sticks celery, 2 white turnips, 2 swede turnips, 1 medium potato, 2 parsnips, small sweet potato, 6 large carrots.
Blitz veggies in food processor and add to chicken. Add more carrots if needs more colour. I also add some spaghetti broken into small pieces.
Add more water if necessary.
Simmer for 3 or more hours, until veggies are soft.
Put into bowls and serve with bread.

My favorite comfort food would probably be potato soup. Or leek and potato soup(when we have leeks which is rare) I don't remember the exact recipe, but its in one of our cookbooks. We use water, potatoes, carrots, onion, celery, flour, butter or margarine, salt. The recipe has more ingredients but I just leave them out cuz that's not how I make it lol

Oh my, that casserole sounds sooo yummy! I do crock-pot cooking a lot so I'm gonna try that one.
My favourite comfort food years ago, was my grandmother's coffee-can steamed pudding with a hot brown sugar and rum sauce. She unfortunately passed away in 2000 and the recipe is now lost forever. :(
Here is a stew recipe that I copied word for word from a prospector in the Nevada desert, who shared his meal with us when my friends and I got caught in a freak snow-storm while hiking. At the time, this, and a warm blanket was the very definition of comfort. Surprisingly I've never made it since, after reading it you may understand why..., but it's good for a chuckle and some great memories.
Prospector's stew
Take a big glob of meat, venison or sheep is best but any varmit will do, and whack it all up. Cook her up some in bacon drippin's, not too much unless it's pig, then you gotta cook'r some more... but not too much more. Take it off the fat and toss it in a big pot of water over the hot coals to boil. Move it off the fire to simmer and pile on fresh coals when they start to get cool.
Throw in a good glob of turnips, if you have turnips. Whack up some carrots and throw in a good glob of 'em, can't get too many carrots. Throw in some onions, it don't matter how many. Throw in some potatoes if you have 'em. Just about any thing is good in stew if you got it to throw in. Shake a few chunks of tomatoes out of a can with a good glob of salt and a bit of pepper and any of your leftover beans. Cook 'till done.
I don't really have a recipe for my comfort food, lol. It's just ordering pizza. Sorry I am lame, but pizza is my comfort food. OH, or a huge breakfast: cheesy scrambled eggs, bacon, hashbrowns, sausage with fresh, warm biscuits, and a tall glass of frothy orange juice (without pulp). No point in sharing a recipe for that either. XD

comfort food recipe: Oddly, when I'm ill I like cherry jello in the form of warm juice (1/2 jello 1/2 water) Cold days I like mashed potatoes... various recipes but one that's nice is yellow potatoes, rosemary, garlic, onions, salt, pepper, margarine that tastes like butter, cream cheese & milk.
My absolute favourite comfort food is steamed broccoli with salt but there's not much recipe to it XD
One that actually requires effort (and is thus a good distraction when I'm feeling anxious or restless) is lentil soup. I don't have a specific recipe since most of my cooking is very kitchen-sink-ish but the latest version went something like this:
Recipe
Chop up some (1-3) garlic gloves and give 'em a quick fry
Add some baked pumpkin (I had some in the freezer)
Add some cauliflower (I used frozen, fresh is fine too)
Add water and a bit of (chili-)tomato sauce
Bring to a boil
Spice time: some general curry/garam masala mix, cayenne pepper, dried parsley. Dried chilipowder and smoked paprika are great too. Usually for comforting soup, I go lighter on the spices; more spices for a pick-me-up soup
While the veggies are cooking, rinse some (100g-200g) dry red lentils and set aside. Dice 1-2 potatoes, set 'em aside too.
If the veggies aren't mushy enough, you can aid them with a blending device of your choosing.
Add lentils and potatoes to soup, you might need to add some water too, the lentils will thicken things up. Add salt
Stir, taste, adjust seasoning/water. Repeat that until potatoes and lentils are well cooked. Add a dab of coconut cream and cashews (optional). Turn stove off and let it sit.
It's even better the next day, this makes several servings. You can easily omit or change things. Goes well with tofu.
Favorite comfort foods is pasta, any kind of pasta dish! (well most any pasta).
Ah now this is an easy cookie recipe that requires no baking, only boiling. My mom made this a lot when I was little, it's no-bake cookies. Like it says, only boil some of the ingredients, take it off then add the thick stuff. Set it out in cookie shapes and it will harden on its own. So good I want these right now.

Savory I love vegetable crumble, can be adjusted to fit whatever you have available and different combinations keep it interesting. Just a bunch of veggies in a stock/gravy sauce - carrots, squash, potato, broccoli, leek. You can put in beans or lentils for better nutrition too. Top with savoury crumble , can put in cheese or spices like paprika for a variation. Serve with leafy greens or peas and drown in GRAVY to make a deliciously comforting mush.
Sweet Banana bread!
2 Cup Flour 1 ½ tsp Baking Soda ½ tsp Salt 1 Cup Sugar ¼ Cup Oil 2 Cup Mashed Banana ¼ Cup Water/Soy Milk - You may need another 1/4 more 1 tsp Vanilla Optional sultanas and cinnamon
Combine flour, bs and salt. Whisk together sugar and oil, add the rest of the ingredients and the dry. Bake for 40mins 180 Celsius - if not done cover with foil until knife comes out clean.

A favorite comfort food of mine is southern enchiladas. I make them from memory and slightly different every time depending on my mood. I also make a different amount depending on how many people I'm making it for and what ingredients I have on hand. See spoiler for a rough outline! It's always super warm, filling, and makes me happy!
Recipe Outline
Filling: mix shredded chicken (or meat of choice), black beans, shredded cheese, diced habanero peppers, diced red chili peppers, diced green chili peppers, crushed jalapeno seeds, diced red onion, chopped cilantro, chopped parsley, and greek yogurt (set aside)
Sauce: (heat) olive oil, tomato sauce, apple cider vinegar, garlic paste, oregano, chili powder, paprika, cumin, salt, black pepper (set aside)
Coat: tortillas lightly with olive oil, layer in baking dish
Fill: tortillas with mixture and 1-2 spoonfuls of sauce each, roll so fold faces down
Top: remaining sauce, shredded cheese, diced black olives, diced yellow onions, and diced green onions
Bake: 375 degrees for ~30min (longer for bigger batches)
Tips! Dairy-Free: I make often with vegan or "veggie" cheese. As long as you use a good brand (not that crap that taste like plastic) they're perfectly delicious! Gluten-Free: Use corn tortillas and gluten-free spices and the dish is gluten-free. Meat-Free: Leave out the meat and add extra beans to the filling mix. Less spicy: Use green bell peppers and yellow onions instead of habanero and chili peppers. Sub smoked paprika for chili powder.
I make lots of changes depending on what I want that day, exs: +white pepper +diced tomatoes +minimum dill (surprising but delicious!). I recommend trying your own versions!
The best comfort food has to have chocolate in it. Works all the time. So how about a cinnamon chocolate cake, which is also really great for cold days

DirectionsIn a small saucepan, combine the butter, oil and chocolate. Cook and stir over low heat until chocolate is melted. Remove from the heat. Add the water; pour into a mixing bowl. Cool to room temperature. Beat in the eggs, sugar and vanilla. Combine the flour, cinnamon, baking soda and salt; add to the chocolate mixture alternately with buttermilk. Pour into a greased 13-in. x 9-in. baking dish. Bake at 350° until a toothpick inserted near the center comes out clean, 30-35 minutes. Remove to a wire rack.In a small saucepan, combine the butter, milk and chocolate. Cook and stir over low heat until the chocolate is melted. Remove from the heat. Stir in confectioners' sugar and vanilla until smooth; fold in pecans. Spread over warm cake. If desired, sprinkle with additional chopped pecans. [/spoiler]
