The Red Envelopes basically represent money.
Red is the color for money, and around Lunar New Year, both Vietnamese [me] and Chinese people wear a lot of red to give them good luck. The dragon dances are done because dragons would scare away the bad spirits, and afterwards, their would be fireworks and cabbage, which the 'dragon' both love. The red envelopes are called Luh See in Vietnamese. That's not how you spell it, but it's a good enough Vietnamese lesson for you! xDD

Red envelopes usually come from your families in Chinese culture. It's like Christmas for the kids, since this is the time that grandparents dote on their grandkids with gifts of money..
