I don't know how many foods I just donated to Charity, but my achievement count has not gone up. I tried again just a bit ago with 3 foods, and it is still the same. Looks like donating foods isn't counting?

I can see you have 304 / 500 for the charitable achievement. Have you donated after that, or is it just a bit late updating the numbers?
Mine does seem to be updating.
You're not looking at the Fantine's Pies achivement are you? That one is retired. :)

I have not donated anything after seeing that my counts were not updating. How long does it take to update?

It should be pretty quick. You might have to do a hard refresh to get it to show though.
Also to do with the "Charitable" achievement, I've donated over 500 items and it has registered as such, but I haven't received the freebie item that goes with it: the Fireside Shawl . Anyone else run into this problem?

If you donated the 500 items before the achievement was done, you'll have to fill out a ticket and have a UA give you the item.
