What are some of your favourite combinations of grilled cheese sandwiches? Recently I've been really enjoying gruyere with shaved pear and pepper on slices of italian.

but on a serious note, I love muhsroom + swiss with minced garlic and a little mayo. your breath afterwards? horrible. your stomach? satisfied.

I have yet to try anything new but I have always wanted to just add a few things, mostly sliced sandwich meat, extra cheese and maybe mushrooms. Might do that for dinner tomorrow. :)

I like cheddar and hard salami

I'm a sucker for mozzarella and tomatoes or even mozzarella with pizza sauce and some veggies.

Just tried gruyere with shaved truffle and it was fantastic.

I don't like cheese because I am a freak but I just wanted to share a story about the saddest "grilled cheese" attempt I have EVER seen.

I saw someone put a cheese slice in a hot dog bun and melt it... and that was it. It was barely melted and nothing was crispy or anything. Even though I don't eat cheese I know how to make grilled cheese and I know what a good one looks like and oh my god this was a trainwreck.

Anyway, someday I want to make a gourmet grilled cheese for my girlfriend. I've heard that smoked gouda would work well (and I know she likes smoked gouda) and I would have to make a nice tomato soup as well for her to probably dip it in.

Grilled cheese, plain sandwich bread, american cheese.... But once it is done grilling, you cut it in half and peel it apart and put in sliced sweet pickles. ...I love this combo. If you do it right you get sweet/salty, creamy/crunchy and hot/cold. ^.^ My dad tried for years when I was a kid to give it a try and I refused until one day I decided to take a bite...and then I walked off with it and he was like "Hey! That's my sandwich." and i evidently told him "not anymore" XD

Toasty flaky bread with marbled cheddar and apple, dipped in a peanut butter and maple syrup sauce. It's heaven with calories.

Where I used to work, there was a little food stall that made grilled cheeses and had different kinds of cheese/toppings, and I got really fond of using pesto or tomato pesto with mozzarella and butter on fresh bread. :9

Also: burgers where the bun is two grilled cheese sandwiches.

The only 'permutation' grilled cheese needs is mayo instead of butter to lube up the bread hahaha

I'm not too wild with my grilled cheese but I love sourdough bread, one slice each of Swiss and American, with a few slices of turkey breast. Extra crispy. Sooo good.

Nice sourdough, a really sharp, high quality cheddar, and a fig preserves. Gotta love that salty/sweet combo.

There's a grilled cheese food truck that comes to events around my state, and they make a grilled cheese with a mix of cheeses, whole roasted cloves of garlic and garlic aioli. It's incredible.

Scares away vampires, too ;)

I worked in a cheese department with 500 different types of cheese for a while, and while a lot of those foreign cheese are to DIE for, my favorite three cheeses to use for grilled cheese are havarti, colby jack, and munster.

There's this one restaurant near where I live that serves a grilled cheese on sourdough with swiss cheese and blackberry jam. It's fucking amazing.
