My favorite grilled cheese: muenster on sourdough, with plenty of butter. Bonus points if you pair that with a can of Campbell's tomato soup made with milk instead of water, and incorporate some shredded mozzarella and a fat shake of garlic powder into that. I'm easy to please xD
I usually do Jalapenos with Colby Jack and Ranch to dip it in. But, I've made a mac & cheese one, and it was amazing.
Also, the restaurants that have really good grilled cheese use mayo instead of butter spread on it to grill it... It adds to the flavor!
Grilled mac n cheese B) make mac and cheese, put a slice of cheese AND a scoop of mac on the bread, grill it. Soooo yummy.
whatever cheese i have in the fridge, queso nuestro on both pieces of bread, and a sprinkle of adobo seasoning!
Grilled sourdough bread with brie and pear is really amazing, or jalapeno and cheddar is always a classic choice!

I'm not too fancy but I prefer sourdough with either cheddar, Havarti or swiss or any combination of the three. Though I am open to just about any type of cheese except American. I hate American.
I use shredded mozzarella and provolone (sometimes other Italian cheeses, depending on what's in my fridge), then I add garlic and Italian herbs to make it into a cheese garlic bread sandwich.
favorite: grill some onions in butter till caramelized , then scramble an egg into that with salt and pepper. Pile this onto sourdough and add smoked gouda, add the second slice of sourdough and grill in butter til the cheese is melted and bread is nicely browned. Cut in half and serve with kosher pickle slices or bread and butter pickles.
Second favorite: Gruyer cheese (or brie) on rye with fig preserves and roasted walnuts....also works with smoked Edam.
American cheese (Velveta) is perfect for simple grilled sandwiches because it melts so perfectly at lower temperatures you would use with lighter breads like white or sandwich bread. and you can flavor it with anything. Borden American slices are the meltiest.
Serve that with tomato soup....simple and quintessential.
I <3 grilled cheese way too much. A favourite but simple one I looove is a nice chewy bakery white bread, brie and raspberry jam
Sourdough bread, brie cheese and thin sliced apples is my go-to if I can manage it. Additives can include a raspberry chili sauce, bacon grease infused butter, or a drizzle of local honey for added flavors :)
I like smoked gruyere, havarti, and muenster on texas toast (all on the sandwich at once-don't have them slice the cheese thick or it won't melt) with ham or bacon and thin sliced bell peppers. I've also made it with pepperoni for my husband. If you cook them on low heat, it may take longer but your cheese will melt while browning not burning your bread. If you try this, I hope you like it! ;)

standard bread, thick cheddar cheese pieces, bacon or pepperoni, and the thing I get looks for is dipping mine into ketchup afterwards :)
I use whatever bread I have on hand, a medium cheddar or colby jack, and I have a few variations for additions... None of them are healthy.
I REALLY want to try a burger with two grilled cheeses for a bun now!!! Oh my gosh that sounds amazing.
There's a food truck near me called "Prime Time Grilled Cheese" and they make AMAZING ones. I had their Jalepeno mac and cheese grilled cheese. (yup) and it was delicious.
Other than that, my absolute favorite is a pulled pork grilled cheese. Slow cooked pork, sauteed up with bbq sauce, then added to sourdough bread ontop of slices of gouda cheese and grilled all together.. my mouth is watering. So good!
AHAHA yeah I prefer bread + cheese and that's it! If we want to introduce meat it is fine but then you have so many other, better options than a sandwhich, like a pepperoni roll.
I am very interested in trying apple and pear slices though, thanks to these thread suggestions!
