Okay, so this is a bit of an odd one, but I found myself with a ridiculous overabundance of canned baked beans and I'm looking for ways to use them up. I love baked beans, but I am really not looking to eat them as a side dish. I need main dish recipes using these silly beans, and bonus points if they are slow cooker recipes!

Chili, casseroles, hot dips? I like baked beans on toast as a part of a full English or Irish breakfast. Could you use them like refried beans in Mexican recipes? Maybe slow cooker beanie weenies (franks n beans) on rice? There are good soup and stew uses of canned beans too.

You could also donate some cans or put them in an emergency kit if there are too many to deal with.

I've always just cooked them with cut up hot dogs and onions in a large frying pan. It's not slow-cooker, but fairly quick and easy!

I've already used some in chili, and most of the soups I've come across have used ground beef (and are also typically tomato-based). We eat a lot of chili and spaghetti here in the winters, so I'm definitely on the prowl for something a little different! If you guys know of a tried-and-true soup that's really worth making, steer me in the direction of the recipe! :D

Love the idea of franks, beans, and onions! I can't believe I forgot about that one. In my family, we do a version that's baked with BBQ sauce and served with cornbread. It's been ages! That's one I'll definitely have to make soon. I'm sure the kidlet would love it, too.

As for donating them, our local food bank gets so many cans of baked beans and pork-and-beans that they will literally give them away by the caseful to non-patrons just because they're overrun. I'm apparently not the only person that turns around and goes, "HOLY CRAP, how did I end up with so many baked beans?" Seriously, I have so many. I think everyone I know who's moved in the last two years has given me all their baked bean stockpiles, plus hubby picked up a case this summer for BBQs, and we just never went through them all.

I feel like there's gotta be something one could make using chicken and beans in the slow cooker, but I haven't come across anything. Or meatballs. I have meatballs that could stand to be used up.

We make pasties with them. Baked beans, bacon, sausages and slice boiled egg in a puff pastry. 8D Sounds a bit gross, but it's not too bad. Also make baked bean pizza with whatever toppings.

So this sounds weird, but it's popular in Korea to have a soup/stew called Budae Jjigae (Army Base Stew) that has baked beans in it, among lots of other goodies like Spam, veggies, tofu and kimchi. Google it and you'll find many recipes :D
Also I'm always down for some simple beanie weenies, with mac and cheese and mixed veggies. Total comfort food.

Here's a soup recipe I found:

Quick and Easy Baked Bean Soup

Total Time 30mins Prep 10 mins Cook 20 mins

I needed an easy way to use up some cans of baked beans (which I don't like as a side dish) so I came up with this soup. Tasty and speedy! I used some left over grilled pork loin and it was delicious. I imagine you could use ham, chicken or bacon with similar results.

1 tablespoon olive oil
1 large onion, chopped
2 medium carrots, chopped
4 stalks celery, chopped
1 teaspoon minced garlic
1 lb cooked pork or 1 lb cooked chicken or 1 lb cooked ham, cubed or 1 lb bacon
2 (14 ounce) cans baked beans, undrained
1 (14 ounce) can chopped tomatoes
1 (14 ounce) can vegetable stock or 1 vegetable bouillon cube
2 tablespoons Worcestershire sauce
water, to desired consistency

Directions

Heat oil in a large soup pot.
Fry onion, carrot, celery, garlic and meat for about 5 minutes, until tender.
Add the rest of the ingredients except extra water, and simmer for 20 minutes.
Add additional water to desired consistency. I liked mine more like a stew. You may like yours more soupy. It does thicken up!
Goes great with grilled cheese sandwiches or cornbread muffins.

Ham and Bean Stew Recipe

Ingredients

2 cans (16 ounces each) baked beans 2 medium potatoes, peeled and cubed 2 cups cubed fully cooked ham 1 celery rib, chopped 1/2 cup water

Directions

  1. In a 3-qt. slow cooker, combine all ingredients; mix well. Cover and cook on low for 7 hours or until the potatoes are tender. Yield: 6 servings.

My version of the first soup is in the crockpot even as a type. It's a big crockpot and I am short on celery, so I may add a third can of beans. Hmmm.

It looked and smelled pretty unappetizing while it cooked. I actually texted hubby and warned him that it might be gross. IT WAS DELICIOUS. It all pullled together in the end. We went back for seconds. It turned out a bit like classic bean & bacon soup from a can, but sooooo much better, with some sweetness from the baked beans (I just have "original" style). I'd definitely NOT use any of the sweeter kinds with extra brown sugar or anything, or it would be TOO sweet.

I used chicken breast and a little bit of bacon, and I did end up tossing in a third can of beans. I think it would be really good to swap out one of the cans of beans for a spicier variety.

I have a ton of leftovers and that makes me very happy. :D

Oh, and hubby took one look at his bowl of soup and promptly dubbed it "Toot Soup," so that's what I'm calling it from now on, hahahahaha.
