With as busy as I am, I am always grateful for BIG batches of food so I can go a day or two without worrying about what to fix for dinner, or where to find the time for it! :)

When broke in college we used to throw baked beans and chopped up hotdog/sausage/ham/whatever in the slow cooker and heat on low with some added brown sugar. Once you're about an hour away from wanting it, throw some cornbread batter on top of that and let it become the pie it was meant to be. We used to call it hobo delight... still crave it from time to time.

I'm actually making something super similar tonight, except it's baked, and uses BBQ sauce and onion, too. It's close to what I made the very first time I had to cook dinner for my family as a kid! :) It's not classy, but it's tasty, and I think my kiddo will enjoy it. (To balance it out, we're having it with salad and fruit, too.)
