really pretty HA, I like the pink and silver effect. When I was young I had a favorite fish in my dad's aquarium that was those colors, your HA reminded me of that :D

Yes, I had a wonderful nothing day yesterday! Been doing chores all day today as the kidlet and I have a bunch of fun plans for the next 2 days. Going to Bullwinkles Family Fun Center tomorrow and visiting a friend and going to Applebees for lunch on Monday.

i have some chicken tenders thinking about making a "beef wellington" type of recipe.

only.... take chicken.... in bowl mix chopped fresh spinach goat cheese rosemary

spread on top of chicken wrap Prosciutto around it and then wrap pastry around that.

then cook.

what do you think?

i've seen recipes (Chicken Florentine) that's similar. but nothing with the pastry wrap.

should i maybe "brown" the chicken after stuffing? brown after wrapping in prosciutto? just wrap in pastry and bake in oven and not worry about browning? (heh. which is the way i kind of want to go)

but you DO brown the beef before wrapping when you make wellington.

what do you ladies think?

i like the idea, of having these little finger food (tenders) almost like a hot pocket kind of deal. and i can imagine it tasting good the next day, too.

That sounds good! I actually used to make something similar to this. Never got it quite right but always tasted good. The chicken is def the hard part. I usually have to brown it in a skillet and then bake in the oven, but sometimes the chicken still doesn't finish. I stuff the chicken with swiss, tomatoes and roast beef and then wrap it in bacon :O

oooo, ok. i think i'll take your experience and learn from it. I'll brown the chicken first, then top the cheese and spinach on top THEN i'll wrap the prosciutto around it. then the pastry around that.

if i do about 3/4 minutes on each side (the chicken) that should give it a good start. and than i'll bake it about 350. i know it should probably be higher, but i want it to cook slow, hoping the chicken will cook all the way through. if i do it at a lower temp and longer.

but i need to think "udon" lol or i won't be able to fix my noodles today! hahahaaa especially since i'm using left over bbq pork, instead of what the recipe calls for.

ok. i've changed clothes, NOW i'll go through my pings. :D (or at least START going through them. heh)

then i'm going to go and fix FOOD.

We had fun! It's a huge place with a bunch of arcade games and games where you win prizes. Liz (kidlet) won 5 smaller balls and a full size rainbow basketball plus a ton of key chains. Then she got a cheese burger and fries. I think that was her favorite part. LOL!!

Hey you!!! :-) I wouldn't have of browned the chicken but probably better that you did. How do they taste? I often do that too when I half a recipe! But I hardly follow recipes any more, I just get the jist of it and figure out the cooking method then do my own thing.

Be careful with the chicken, make sure its cooked properly and gets hot enough to kill and germs. Yea Id love to be on a warm sunny beach right now, here in England its pretty rare to be warm enough even in summer. I did Chicken wings in chili sauce and pizza this evening, bit weird, but it filled a hole.
