If you don't mind me asking...Which map pieces do you have? I don't think they got restocked in any of the shops but I could be completely wrong (i've just never noticed them anywhere).

You will end up with a shop full of stuff that may or may not sell. It depends. People will buy things randomly for quests or collecting. I just keep my shop up to date on pricing and for the most part...eventually it will all sell down.
