I did some digging but all I could find were scattered, pain to find posts (such a waste), I couldn't find an actual guide or compilation. However, I have a talent for missing things right under my nose so here I am.
There may have been one many, many eons ago, but as far as I'm aware there is nothing current.
I checked who has a pet with a listing of as many guides as they could find and there is none on the list. The only shops guide is the one for how new shops work. You can check for yourself: Guide to guides.

I could try my hand at making a guide, but I'm not sure how useful it would be because I'm primarily sitting in one shop, but I've probably made a good 600mill from it over the course of two-ish years.
I think the reason why there isn't one is that most people probably aren't restocking for their main source of income. Questing, though it can be tedious, is honestly a lot faster way to accumulate sP, and some of them even give you rare items to sell to boot.
I was also hoping for a RSing guide; I just started the game a few days ago and I am getting the hang of it slowly. I will have to learn the hard way I guess! Oh well, it's sometimes more fun that way :)
to be fair, i wouldn't worry about restocking unless you really want to. the best & most straightforward way of making money is going to be questing. i've never bothered with restocking to any significant degree, and i've been playing for checks notes over 14 years :0
