This might be silly but I'm looking everywhere and don't want to accidentally waste my CSC. I finally saved enough from Morty Cards from quests to get something nice! <3

I saw in the Cash Shop there's a section for 'collections' that look like cute bags, and the descriptions I've looked at are like "a bag full of goodies!"

I was wondering if that was just flavour text, or you really do get multiple items out of it? Is there a way to see what's in them?

They contain multiple items but you only get to pick one.

Welcome! Yes, cash shop collections contain several different items, but unfortunately you can only choose one item per collection that you buy. The easiest ways to see the items would either be to use Subetalodge (for example, this search will bring up all of the July collections which are currently available to buy, and you can click through to see the lists of items available in each like this) or if you wanted, you could go back to the first or second day of each month in the news archive to see what's available. This format is slightly easier if you want to comb through and preview/add items to your wishlist a little more easily :) This is the news post for this month's collection.

The cash shop collections are sets of items released on the first day of each month. The items it contains are listed in the news post when they get released. When opening the collection you get to choose one (1) of the items in it. Generally the items in each collection fits a theme. For instance, July 2021 collection is based on carnivorous plants.
