Biscochitos are the state cookie of New Mexico. We also do not have almost any chile options. We need green chiles and chile sauce (green and red) options. We don't have any warm tortilla options either like corn or flour. Also, there is only one type of enchiladas--it would be nice to have green chicken enchiladas, blue corn, or creamy poblano enchiladas. There is also only one type of taquitos on site which is a seasonal item and hard to get. It would be nice to have flautas and different types of taquitos like shredded beef or shredded chicken. Tamales are also traditional holiday food (only one type on site currently) and they come in all kinds of varieties--even dessert/sweet tamales! I'm thinking mostly just from a New Mexican food perspective, but I'm sure there are a lot more cultural foods to think about creating too. Thank you for your consideration ❤️ Can you think of any other New Mexican foods that I may have forgotten about?

Yes please. Tortillas that aren't tortilla chips. It would be nice to have huevos rancheros, frijoles, sopaipillas, and a more traditional flan too. And maybe empanadas and tres leches cake?

[edit] How do we not have tomatillos? Or salsa verde?

I've never seen them travelling through so I dunno if it's a real thing, but clickbaity sites talk about Frito Pie being a thing in New Mexico.

Totally a thing! They are usually smothered with green and/or red chile (just like everything else) and more toppings than chips. Would be super cool to see that on site too!

Of course! I'm Texan and I know New Mexican cuisine and Tex-Mex aren't the same thing, but they have enough in common that I just couldn't resist piping up. Haha.

It is definitely a real thing. 'Fritos' is a brand name though, so the site would have to name it something else. (Corn chip pie?)

they sound like a fun thing to have here then! Cinder Chips are already a Subeta item and they come in some spicy sounding flavors. So they could be (Flavor) Cinder Chip Pie(s)
