My pet Larvitar is Bloated, Very Happy, and he isn't in a fight at the moment.. but he won't show up on the Challenge an Opponent page. He's also the only pet of mine that won't show up. Is there something else that stops pets from entering? D8

you can't battle with a pet that's just been transferred for 30 days; it's so people won't pass strong pets back and forth to beat opponents

If you were transferred the pet from a friend, then they cannot battle for 30 days after transferring.

Also, have you checked the statistics page to see if your pet is already in a fight? Also, make sure your pet has more than 0 HP.

How long ago did you receive Larvitar? Ibelieve there's a period of time where a pet that has been transferred between users cannot be used in battling - probably to prevent people shuffling high-stat pets to friends during battle events.
