I have been accumulating quest points but no matter how many times I earn more, it says I have 1 quest point at the quest shop and on the currencies vault. I bought something worth 3 quest points to see if it would work or reset my quest points, it let me purchase it but it still is telling me I only have 1. So I guess the points are there, I just have no way of knowing how many I have

This was a recent bug. You should file a ticket to get it fixed so it displays correctly. It should be fine after that.
