Looking for advice on my current set and scrolls as I have been away for a few years. Are there better weapons out there for my tier? Looking for good attacking scrolls too

You have a good start! I recommend buying Recycle Blaster and Phoenix Quill first. The Blaster will turn one of your opponent's weapons into a 1-icon recycled wad and the PQuill will give you a 100% heal once per battle. Then I would add an Item Hunters Bomb to finish off the set.

You really don't need three attackers, so if you picked two between the three you have, that would give you an extra space for anything else you may want to use, like Soma Tablets or Flayed Lord Breastplate, for example.

For scrolls, Aftershocks Scroll is the best affordable infinite use scroll because it has attack and defense icons and a good amount of heal on it. You'll find that Cobalt Eternal Scroll and Fatal Fire Scroll are two of the better options for defensive scrolls.

Sure, you can hang on to the same items in T8 if you want :D The Replica Minotaur Knocker scales with your pet until T11 so that isn't really an issue. A number of people have said they use Reborn Icewand of Doom until T8 or so. Panzer Hydra Blade is a nice, cheap option if you find yourself wanting to try something different though, and I believe it scales until T10.
