How about Penguindrum? Its a cute anime that has a really interesting plot.
Like its about this girl whos sick and dies. Her step brothers were really sad until a being from another world comes and brings her back to life. She tells them as long as they try and find the penguindrum their sister will stay alive. So they go out looking for this thing called a penguindrum. The art style is super cute and the characters are great. Its a romance. And I find the characters very relatable.

It's also known as "that one magical boy anime". If you like lighthearted parodies + magical girls and don't mind some bare chests and butts (the boys reunite at a hot springs every episode, after all), I think you might find it entertaining.

Don't know if you would like this one, but I'll suggest it because I have gotten other people who don't watch a lot of anime to enjoy it. It's Noragami and Noragami Aragato (Season 2).
Yato is a minor god who is trying to get a shrine as all the other gods in Japan have. To build his shrine, he does odd jobs for 5 yen as an offering. He saves Hiyori, a student who almost gets killed in an accident. But this causes her to lose her body from time to time as she chases after Yato to fix her state while helping him on various occasions. He also meets Yukine, a boy "spirit" that can be used as a weapon known as a Shinki. The three of them work together to face Yato's hidden history and help the god gain a shrine.
There are a lot of fun characters in this show and the show is evenly balanced between drama, comedy and just overall development.

Ive heard it's a DARK anime.. Im not into dark.. Also it seems like it's a confusing anime..

Right. I'll just throw out some stuff I liked that arent dark or mecha and hopefully are a little varied for anyone interested
Silly comedy SOL type things
-Classicaloid (musical show where classical composers are magical boys)
-Kyoukai no Rinne (supernatural comedy from the creator of InuYasha)
-Gekkan Shoujo Nozaki-kun (about a high school boy who is the mangaka of a shoujo manga}
-Gintama (long running and has lots of episodes, comedy, sci-fi, historical, the first few episodes are slow though}
-Tanaka-kun wa Itsumo Kedaruge (sleepy highschool boy and his school life)
-Sekkou Boys (an idol short but the idols are Greco-Roman sculptures)
Also I will second with Cute High Earth Defense Club LOVE! It's hilarious. Can always use more magical boys.
Not mecha action shows
-Garo: Honoo no Kokuin (action, has some sad parts, part of a tokusatsu franchise but you dont need to have seen the rest of it to watch this)
-Tiger & Bunny (a show where superheros have sponsors, some sad parts, does include a part where a characters mother gets beaten by her husband but it's offscreen)
-Psycho-Pass (im not really sure how to describe this one)
-Kekkai Sensen (also comedy SOL)
Slower shows/drama
-Natsume Yuujinchou (has some sad episodes and some heartwarming ones)
-Uchuu Kyoudai (about brothers who both aspire to be astronauts)
-Uchouten Kazoku (it's about tanuki living in Kyoto, a family/character type drama)
-Sanzoku no Musume Ronja (about a girl growing up in a bandit family, apparently based on a series of books, not a complete eyesore despite being 3D instead of 2D)
-Princess Tutu - (fantasy and ballet)
-Net-juu no Susume (also comedy an office worker quits her job and plays an MMO all day, cute romance)
-ACCA (a government worker travel his nation but there is a coup forming and rumor has it he's leading it, lighthearted though and not as political as it sounds)
Mecha I liked/Make you cry like a baby stuff/other stuff you may not like but I'll throw it out there anyway

-Death Parade (bartender has to decide whether to send people to reincarnation or not there is also Death Billiards which is the movie the series continues)

Also it's not technically an anime, and it is mecha although the giant robot is secondary, I recently ran through Voltron: Legendary Defender and I like it. It has it's flaws but I like it.
Maybe shirokuma cafe? A friend told me it's both funny and cute :)
I highly recommend "yuru camp", or "hakumei to mikochi," no romance, no fan service, no fighting, just pure relaxation.
