I might have skipped over these but how do I increase pet stats and fulfill pet happiness?

You can choose to put your pet in the resort in Veta lake (there's a building on the water) which will keep your pet(s) full and happy or give your pet a minion. A minion will keep your pets happy :)

If you want the stats to increase, training them at Riverside is the standard way, but there is a lot more info in the Battle forums with guides on information related to battling :)
