I can't seem be able to remove or swap out my skins. Like clicking on the remove skin button doesn't do anything, and my fungus skin is still greyed out on my wardrobe page.

I don't think you're at the final stage yet. It's hard to tell since your HA is dressed but I'm pretty sure you've got one stage to go yet. You should receive an event to your sidebar when you reach the last stage of your virus, then you can remove the skin (but you have to click Wear to save your HA after you remove it in order to get infected with something else)
