The total accumulated (towards the achievement) in one legacy shop at the time of shop conversion should count towards the accumulated total and get added to the total in one of the new shops.

For the Making A Living achievement, this was already implemented according to this news post:

If you already have progress toward the Making a Living achievement, there&;s nothing you need to do! The sales from your old shop will automatically be added to the sales from your highest-earning shop to continue progressing toward the achievement. If you do happen to make more sales in your old shop before they&;re disabled, though (or your achievement progress is out of date!), you can update your progress by visiting the shop&;s edit page, the same place the Making a Living achievement was previously earned.
