I know traditionally on other sites it doesn't "really" affect battle in any significant way, is that the case on Subeta as well? Do I need to be training speed for any reason?
Some weapons get stronger with higher speeds and certain curses/blessings proc more often wih higher speeds, and you will get fewer crits against you and crit your opponent more if you outspeed them. Further changes to the stat may come in the future

In case the notion of "crits", critical hits, escapes you :
higher speed than your opponent : higher chance of double damage against them low speed : high chance they will get double damage against you

When the stat cap was active, my strongest pet was the fifth speediest. Magie would pretty much crit-crit-crit challengers and really whomped the global challenger last site event (until they upped that big baddie's speed by a lot),
Speed just can't be too useful (?) so the BAs then upped the speed of just about every challenger. I still see challengers out there that you're better off having tons of HP to get them. Having some speed is good, but as long as this kind of re-working by staff to nerf speed is in the cards the original plan of most battlers to just have a ton of HP is probably a better way to go.
if i may ask, how does speed work with crit?
let say the enemy has 1000 speed. and i have 10 speed. does my crit chance the same as if i have 800 speed? if it is not the same, how much does the crit chance differ? and if having more speed than enemy gives you more crit chance, how much different in crit chance between having 999 speed and 1001 speed?
