I'm trying to figure out how to change the gender of my avatar and the expression.

Hi there! I'm new as well c: To change your gender/expression, go to your wardrobe then click "avatar." There, you can change your gender and create expressions for your avatar. They're all default until you customize the individual expressions (such as happy, neutral, excited, etc) and select to use whatever expression you customized in the "basic trait--expression" dropdown menu. Make sure you click "save & use" when you're ready to change your avatar! c:

I can't seem to figure out how to save my avatar's hair...

Your avatar's hair should be under Hair Salon instead of Base so maybe that's why it's not working properly?

Also, just a side note, ping () the person you want to respond to in the forums so they'll receive a notification when you message, otherwise they probably won't respond unless they check back to the post. If you don't want to type it out, you can click the ping button (looks like a megaphone) on their post and that'll automatically add a ping to your message.

Welcome to subeta! Most users usually don't use the hair salon.
There are wearable items for the head that are different hairstyles, you add them to your wardrobe and put them on like other clothes. I am going to send some over to you :)
