This question is trivial and likely of no interest to anyone but me, but why aren't there Dark Ice and Dark Wind potions to compliment the Magma, Light, Water, Fire, Earth, Death, and Life varieties?

Because they were made a very long time ago and those got overlooked/or didn't exist back then. Same way there are no tomes or shards for those elements. Would have been nice if they were added when the art was updated but maybe someday it will get caught up.

There're a lot of things that could stand to get caught up, first, but in a perfect world maybe they'll run a plot about repairing/recovering the lost elemental symmetry of those items. Or, in a less perfect, but still agreeable world, maybe they'll drop them into the game all at once. Eventually.
