I love gaming. Alas, I don't love a lot of games - I'm so picky. This drives most people that try to suggest games to me up the wall (I'm sorry, D:).
I am an Artist by profession, and things have to be very visually appealing to me, first and foremost. Plot & Battle system are tied in second place, really. I can't stand turn-base games unless the story is just mind-blowing, but I love RPGs, and a lot of them are turn-based. I don't like card based games. Visually, I really dislike cartoon 3D (ala Wind Waker - and generally most Nintendo games). I do like isometric/pixel, though, such as Disgaea: Afternoon of Darkness. I very much prefer serious games over funny. I don't like games like Grand Theft Auto at all.
My favorite games are probably (different systems, no order):
Final Fantasy VII: Crisis Core (okay, this one is in order, this is my favorite ever atm!) Most any Resident Evil game Half-Life 2 & all the episodes. Sim City 3000 (yes, the building one) Riven WoW Guild Wars MapleStory Portal (really, the main reason I liked this was the computer/girls commentary, lol) Disgaea: Afternoon of Darkness (I didn't finish it, it just got way too repetitive. I went through a last map that was just daunting in terms of how I would have to move around, only to enter another one exactly the same, only 3x larger..and I turned it off. I did like the graphics, and it was funny, and I enjoyed it until I was level 50-60 (can't remember), at least) Super Mario World
What I'm most interested in would be a game similar to Crisis Core: Graphically stunning, great plot, free-movement, live battle system. I'm currently trying to play FF12 and I'm sad because it looks amazing but I really dislike the battle system. :( I'm also playing Dark Cloud 2, and the battle system is fun, but I wish it wasn't so cartoony! Ugh! I'm so freaking picky.
I have a PSP and a PS2(so also a PS1), any suggestions for those systems would be great. :D You can also suggest PC games, but I'm mostly interested in PSP right now.
Shadow of the Colossus maybe?
The graphics aren't AMAZING, but the monsters you fight are downright awesome.
Nice storyline to go with it too, and I loved the music.
Uh.. yep. That's it.
And maybe Okami? You've probably heard of it, but the art is really unique considering every other video game.
Hmm.
Maybe try Star Ocean: First Departure for the PSP? Though it has PS1-esque graphics, it has a very nice, free-movement battle system, animated cutscenes, voice-acting, and a pretty interesting plot.
Also an RPG with a free-movement battle system is Tales of the Abyss for the PS2. Got some lovable characters and also has voice-acting and animated cutscenes.
I adored Final Fantasy 12, but it's not everyone's cup of tea.
If you want a great story, turn-based RPG with amazing graphics (for the time, at least - and I still think they stand up to stuff made years later) go for Final Fantasy 10.
Okami gets my vote, too. :)

I've actually never heard of Okami. The art style is very intriguing, i've never saw a game like that! I might have to pick it up even if most of my entertainment will come from staring at it. xD
I completely agree with both the suggestions, Shadow of the Colossus (SoTC) is really great and something different to the normal adventure games out there (like Tomb Raider etc). And Agro, the horse, is such a joy to ride :) You do have to follow a somewhat linear progression in the game but the world is opened to you and you don't have to complete one battle to enter another part. Also, the game has a very isolated feel and vague story which actually adds to the game. The music is brilliant! I actually bought the OST because I loved it so much (and is now the most expensive CD in my collection, lol)! I do however suggest renting this one first as it is not to everyone's liking.
The other game to try is ICO, it is mainly a puzzle based game and has the same colouring like Shadow of the Colossus with a few skirmish battles thrown in. This is also a great game and is the sequel (even though it was made first) to SoTC.
Okami is visually beautiful with the Japanese style animations and theme. The game is also unique in using "brush strokes" to solve certain puzzles and battles. Music is also well composed and suites the theme and settings. This one is definitely a must have, even if you just put it on to stare at the graphics like you said :D
I unfortunately don't have a PSP but as far as PS2 games go:
This might not be your type of game but I'm still going to give you the choice at least - God of War, but if violence doesn't sound appealing to you don't go there. ;P
Also Kingdom Hearts, but that might be a tad bit too cartoony for your taste, the storylines are interesting though and the battle system is quite easy to handle.
(Final Fantasy X is also a great game to play, graphics AND storyline wise - but of course, turn based battle system.)
Okami is a great game. It's very inspiring. And have you ever heard of Kingdom Hearts? It's worth a try. Also if you have a powerful enough computer, you can try out Team Fortress 2. :D

Oh man, I am exactly the same. Graphics are my priority. (That's why as much as I hate so many things about Final Fantasy I will keep playing it anyway because it has gorgeous graphics.)
If you're looking for a non-turn-based RPG you should check out the Tales games. My personal favorite is Tales of Vesperia, but that's only for 360. However Tales of the Abyss is for PS2, and it's very good as well. It's got one of the better plots of the series, and great characters. Be prepared for an assload of plot twists though because no Tales game is complete without an them.
There's also Tales of Legendia but it does not have the best graphics or battle system in the series. It's best facet is the music and to some extent, the characters.
I just got back from gamestop (again). I picked up Okami and also ICO. I was looking on the net for ICO last night, and good god some copies go for $150+, so when they said they had it for $17 I was all over it. xD It looks like I might like it. Either way, +1 rare game to my collection?
It's funny you should mention ICO to me because I spent all of last night trying to find a reasonable price for it before you even posted this. xD It looks very pretty, and it sounds like something I might like. SoTC looks like it might get boring after killing the first 2-3 colossus things so I'm not really sure about that one.
Someone who knows how I feel! XD I'm trying to play FF12 because it's beautiful but arghhhh the battle system. hateee. I tend to play as Fran just so I can zoom in behind her while shes fighting and look at her pretty hair and barely pay attention to the battle. XD
I saw a few Tales Of - games up there. I wasn't sure if I'd like them or not. I just took back Dark Cloud 2 because I just didn't like how cartoony it was.
You might dig Bioshock?
It's for PC. I've only played the PS3 version, but they should be the same.
