I also don't get the brick. Don't think it would work if vamps were actually real anyway. I do wonder about people that like to mess with the dead though. Ewww!
It's basic superstition, I think. Maybe they thought the vampire could reach out from the grave and drain people without actually moving - stranger things have been believed. Get some mass hysteria happening, and people will be willing to try some really weird shit.
And, it's possible that the brick was the closest thing at hand, or that the material the brick was made of was just stronger than wood. Who knows?

Interesting article. Of course I feel for the poor woman (at least she was already dead when it happened) but could you imagine the suffering her family must have gone through after the bricking? A group of peasants outside your door with torches and sharp object shouting, "Your -insert proper relative terminology here- was a vampire! She was sucking the blood of the living and passing on the plague!" It may have gotten very ugly for them if paranoia went beyond just the corpses at that time.
