It's currently at two, but does that ever change, I am assuming not, and same for how many weapons/items your pet can use?

Nope, it's always two. :)

Its two, but you can also equip a shrine that activates randomly through out the battle, and you have scrolls :) so technically your pet can use 3-4 items per turn.
