I would very much appreciate the option to organize my gallery by item ID, so the items released together will show as a complete collection. Galleries and shops used to be arranged this way and I'm not sure why it changed.

I think you can already order by ItemID..

Go to a gallery --> Edit Shop --> Choose ItemID from "Order" dropdown
