I've notice how some people have different colored profile blocks (ex. pink or purple) but I'm not sure how to change that. Is it like some sort of profile code or is there a certain area/button where I can change the color?

You need to add the "Profile" section and edit it. It will give you both the option to freely edit your profile through CSS or simply switch to a different scheme - which is what you're looking for.
