I'm hungry and I also like to escape my problems by cooking and baking. Always looking for inspiration, so post your favorite dinner, cake, bread, snack, ect below!

I'll start with this lovely lemon curd I whipped up a few days ago! Reminds me of sunshine and spring in these cold winter months. :D The key is love, and by love I mean cooking at a low even heat and stirring constantly for like 15 minutes.

2 eggs 2 egg yolks 125g sugar (1/2 cup) 2 lemons 6 TBSP butter (3/4 stick of room temp butter)

Juice and zest two lemons. Whisk eggs and sugar in a pan. (I find it much easier to use a double boiler. Cooking at too high of a heat/not whisking enough will scramble your eggs and make for a clumpy curd🤢). Add lemon juice and zest to eggs and sugar. Whisk to combine again. Continue lightly whisking until mixture has warmed and thickened. Consistency should be close to mayo and coats the back of the spoon. Remove from heat. Add cubed room temp butter and whisk to combine once more.

& that's it! If you didn't use a double boiler and cooked it directly in a pan I would recommend straining the curd through a mesh strainer to ensure a perfectly smooth consistency. Stick it in a jar or layer some plastic wrap on top. Let it cool and enjoy!

Perfect for lemon bars, a lemon meringue pie, or to eat by the spoonful (my preferred method).

I have a recipe to share. It's called Tuna Noodle casserole, I've made it for my family, and lemme tell ya, they loved it!

Well here the recipe and it's so simple too:

16 ounces egg noodles 10 ounces canned tuna drained 2-10.5 ounce cans cream of mushroom soup 1/2 cup milk 1 cup shredded cheddar cheese blend ½ teaspoon salt ½ teaspoon pepper ½ cup bread crumbs 1 tablespoon butter melted 1 tablespoon fresh parsley chopped

Instructions:

  1. Preheat the oven to 375°F. Grease a 9×13 inch casserole pan with nonstick cooking spray.
  2. Cook the noodles according to the package directions.
  3. Drain the noodles, and return them to the pot.
  4. Stir in the tuna, cream of mushroom soup, milk, cheddar cheese, salt, and pepper.
  5. Spread the noodles into the prepared pan in an even layer.
  6. In a small mixing bowl, combine the bread crumbs and butter.
  7. Sprinkle the bread crumbs over the noodles.
  8. Bake for 15-20 minutes, or until the top starts to brown.
  9. Sprinkle the fresh parsley over the top of the casserole just before serving.

I LOVE IT! I need more casseroles in my life. Such an underrated and comforting dish. Thank you for sharing <3 ill have to pick up some tuna and mushroom soup at the store for a sunday night casserole.
