I have the option to read to pet or use on pet. What happens when I use it on my pet? I read it increases intelligence by 1 so is there any difference which option I pick?

You can read it to your pet for a guaranteed +1 intel, but you can only do that once per pet. If you use it on your pet, it can either give 0 or 1 intel, but you can do that over and over.

so I'd still have the book if I used it on my pet?

Nope it is a one use item regardless if you read or use it. When you read a book any book to a pet that pet can never reread it again. They are just no longer an option to read to. However if you use the item, you can get another one and use it again.
