The first wave of masq is here so lets get the suggestions for neugarten started. Neugarten started on june 24 last year but the date might still be subject to change.
the general themes for neugarten are: -sustainable living -Locally sourced products(/ maybe locally made crafts?) -Vegetarian and vegan products
Some older but topical suggestions from me copy pasted here to get us started:
Is there no Habeas Corpus in NPC Chancellor Phoenix's realm? NPC Gunter Brauer has been held without bail for two years now.

If there's going to be more craft-themed items, I think I'd like to see some of those yarn bowls. I think the only one we have so far is that one in the quest shop, I'd like to see some others, and in different colours and shapes. Here's mine (look, it has a lid):

There could also be other carved wooden items as well. And then maybe some items to do with being responsible when it comes to wood and making sure you don't cut down too many trees, or if you do, you plant some more to replace them.
Actually, now that I think about it, I would like to see more held tree branches because that would be good for one of my OCs, but that might be more related to Vesnali.
I really like the idea of carved wood as well. Something like sustainable wooden toys to play with our pets.
For sustainability I think architecture or recycling/treatment plants could make a cool background.
Garden/greenery covered apartment building. Another grass/green covered apartment. Water treatment plants have those really cool circular tanks.
Wearable potted plants please! Monsteras, succulents, flowers, elephant ears, etc.

Well perhaps as they added vegan stuff in last year, how about we have some non-beef, non-pork sausages made of other meats like chicken or turkey.
Also, we probably should have some special mustards or actual regional German sausages like Weisswurst (a sweet paper-white sausage that is very good.
Also, perhaps we should reflect actual Oktoberfest which has had a national fair thing sort of attached to it for a long time and have some german-carnie-type-stuff to it.

okay, that is what I largely saw last time I participated so thought that was still a thing. Sorry about that.
Cookbooks or recipe fliers.
At my local farmer markets the vendors a lot of the times will have recipes printed out showcasing a certain food item or even recipes that you can make using mostly items from the market. Plus some would make it so you can sample.
Another would be printed fliers talking about the vendor and their farm or craft.
Folk medicine: The vendor at my local market actually doesn't sell medicine (she uses the plant in soaps) but always showcases a plant each week and will talk to you about its uses.
Plants, yes. There's usually a vendor or two selling potted plants or vegetables. The plants can either be common varieties or more uncommon/exotic.
One thing that really caught on around my area: homemade pet treats made from locally sourced ingredients. The local family took their hobby into a full time shop selling chicken jerky, freeze dried chicken/veggies/fruits, and grain based meat free (though some come in a meat added version too) biscuit treats like pumpkin, blueberry, apple ect.

Some fun stuff I found that coud be something you would find at a craft market -Guatamalan worry dolls xXx -custom baggies of Potpourri xXxX -handmade stamps xXx -Here's some wacky, non medival chainmail crafts xXxX -Sewing patches (or a jacket that is just COVERED in them) xXxXxX -Some misc stuff that looked fun xXxX
Some ideas more in tone with the ecofriendly theme -Books/folders on home electronics repair (different books for repair of computers, Kitchen appliances, Electronic toys, Powertools) -ecofriendly cleaning products: detergent, dish soap, handsoap, floor cleaner -Clothes from recyceled plastic/fabric scraps/fabric fibers (more a thing that can be used in descriptions, these clothes aren't really outwardly distinguishable)
I want to second the suggestion for variety mustards.
Tie dye kits please! Would love to have some cute new tie dyed wearables. (Sweatsuits?) Some color variations could be natural, dyed with things like turmeric and pomegranate. Japanese shibori is nice too.
Bojagi and furoshiki, traditional Korean and Japanese wrapping cloths typically used to transport clothes, gifts, or other goods.
Crocheted granny square fashion. Very summer festival.
Visibly mended wearables, with emphasis on embroidery and patches. Japanese shashiko is popular.

More Oatmeal items! And I am not meaning the food.

at farmers markets/street fairs i've found a lot of free samples/street food/stuff meant to carry and eat. i know there's the finger foods from the libertine lounge, but more along the lines of these: lemonade slush / bubble waffles (can have vegan ice cream/etc) / elotes/mexican street corn / panelle/sicilian chickpea fritters and they can even come in cute little carriers like this!
we had some really nice candles and soap last year, so maybe some soy/local beeswax/coconut oil melts could be good? could be either for the bath, or those scented kinds? regular rectangle shaped ones / shapes! / bath melts
also similar to the stamps suggestion, maybe wax seal kits? this / another one / maybe handmade paper/stationery? / or recycled! / or upcycled
gonna. put a stopper on it for right now before i find more cool stuff to gush over but yeah!
I would love farmer plushies. Please make a Bovyne riding on a tractor.

As we're all supposed to be quarantining still due to the pandemic, can we get some home comforts going for Nugarten? Also these are great but we have barely any items to make indoor scenes with, so I'm proposing some indoor ideas, if that's cool?
Macramé wall hangings. Maybe which hang off the window frame of the colour swatches?
