Create a Warador, then toss it into the Rift and it will disappear for a few days and come back Riftborn

I can't think of any reason offhand why you would need another pet, unless an old game requires it or something, but you should be fine. It's still connected to your account even if it doesn't show up on your end.

Most site-things will work without a pet surprsingly enough. Your pet shows as belonging to the RIFT if you look it up via URL tricks.

If you are doing a Major Drills quest that requires you to do something to a pet like play with it or feed it something, then you will not be able to do that particular task and will have to quit it or temporarily adopt a guinea pig pet from Adopt R Us. Random Events that add stats to your pet (rare) may not work, and you will not be able to complete an Oracle Quest if you get one or if you do it will be wasted. You will not be able to start or finish Jim training on your missing pet. If you pet isn't around, it can't collect their daily income at the Job Center.
