I have been working on my pet Kevynn and I am not sure how people decide which stats to train. At first I was making them all balanced, but is there a benefit to overpowering one or two? I guess I am also confused about which weapons are optimal to use. Do you take species into consideration or the opponent? I am a noob with fighting. A noob in general really. Help.

Right now is still really early so you're good to keep training evenly until you decide where you'd like to go with the build, though some people will say leaning towards more health even early is helpful against tougher opponents. I trained my main pet evenly until she was T10 or 11.

Species doesn't matter with opponents, only level and stats.

It doesn't matter as much now, but later on there isn't really an optimal set of weapons as there are optimal weapons against particular opponents. There are bad weapons though, but I'm not the best at weapon recommendations so I'll have to leave that for someone else.
