When you feed your pet something or read something to him, you can see the list of used itens, but do others see it? If not, what is that for? And how about toys, do they appear somewhere after you use it to play with your pet?

Yes others can look at your food and book lists. The food and book list are primarily for your own use to help you track and also to trigger achievements.

No, at this time there is not a toy list.

You go to their profile (by clicking on their name in the forums) and look for their pets (not everyone has their pets on their profile). Click on the pet to go to the profile and look for a link to books and/or food. Again, not everyone lists that info on their pet profiles.

There are other ways to find the info if its not listed if you really want to see. Feel free to ask for more info about that.

Oh, I see! Now, let's say I wanted some pet to have read/eaten only certain foods, is there a way to delete something from the list?

No there is no way to remove or delete an item from their lists as of right now. There have been suggestions for this.
