I've figured out how to edit my actual profile, but when I try to edit interests it just wants me to edit the title of the widget. How do I change what's inside the textbox?

the page is right here (i don't think it's actually linked from anywhere, i just manually appended "interests" to the end of the URL). that feature is pretty much defunct (you used to be able to click on users' listed interests to... i think see a list of other users who also had those interests?) but you can still use it to list them on your profile if you want.
