Hi all - shyly waves...
Ummm..well..I usually don't post that much in issues and advice but I know there are a lot of wildly talented and creative people here playing subeta that love food/cooking so I thought I'd give it a go :)
I was wondering if anyone would like to give me some culinary advice :)
I have to eat a really strict diet due to my genetic disorder and....
I feel like I've exhausted all recipes /dishes I can think of or find via google
Maybe you guys can help me come up with new tasty dishes?
Thanks to anyone who wants to try! Hug I really appreciate your kind efforts.
My disease means every time I eat I could die (anaphylaxis yay-eye roll - I react literally to the act of digestion alone so any food can cause problems) so... I like eating to be as fun and as stress free as possible - part of that is variety
Requirements : Has to be... - Vegan
I've been eating mostly stuff like soups, salads, wraps (cabbage and flour), stir frys & starchy things like breads, pancakes, fritters, & waffles...
Again sorry if it's too hard- I know that eliminates a lot - blush Thanks for letting me pick your brain
Feel free to post pictures of the food your suggesting or recipes
Oh and please ping me :) I want to make sure I don't overlook you or your advice
Something that takes a bit of effort but that I think is really tasty is Butternut Squash Ravioli, which you can then put any sort of sauce on!
I also really like Green Bean and Pesto Risotto (the cheese is optional in this, it's just a topping).
The way I make my pesto is: 3 cups basil, 3 cloves of garlic, spin in a food processor. While it's spinning, slowly pour in 1/2 cup of olive oil, then add salt and pepper to taste. (Many pesto recipes call for pine nuts or some other sort of nuts, but I have a friend who is allergic to every sort of nut under the sun and so I tried leaving them out: it works equally well without!)
they/them/theirs, please.
Oooh! Thank you so much for these great ideas! Hug.
They sounds delicious and would be a nice change of pace. I've been looking for a way to use more squash (because it's packed with vitamins and is suppose to lower inflammation in the body - really good for my disease). I can't eat much plain squash by itself (to me it has a strong taste) but mixed with other flavors it's good.
I don't know why but I never thought to try making ravioli (or any pasta) from scratch..I'm sure with enough practice I could do it. I'll be sure to post Picts if I succeed hehe.
Thanks for the pesto tips too. I might try subbing in some kind of seed for pine nuts and see how it goes :) (I do good with flax, seasame, or squash seeds)
Thank you again for sharing your culinary wisdom with me! I so so appreciate it. You made my morning!
Some food processors have a pasta maker attachment you can get!
And if you're not entirely sick of soup, I also have a pretty good butternut squash soup recipe somewhere.
they/them/theirs, please.
- I'll have to look for one of those. My mom just bought me a fancy smancy food processor (to make scratch cooking easier) as a bday present so I'm sure I can order it somewhere. It would be nice not to have to roll it thin by hand (takes out newbie cooking errors- like making it too thick)
Ohh! I'd love your butternut squash soup recipe if your up to it. It's one of the few soups I haven't tried yet (because I though you had to add cream or butter). With winter weather coming soup is always nice (I'm not far from the Canadian border so our winters get brutal! Frostbite warnings in literally 5 minutes of exposure)
here is the recipe I use! The butter in the ingredients is for sauteing the sage in to garnish the soup--you can either do it in olive oil (or some other sort but I like olive best), just garnish with fresh sage, or just leave it off! I have some other vegan soup recipes if you're think they sound interesting: Broccoli soup, onion soup, and potato-rosemary soup.
they/them/theirs, please.
