I'm fairly new here, and I wanted to try my hand at restocking, but I really don't know how to approach this. How do I know which items to buy? Is there a guide I can read or something like that?

I don't know of any guides, personally. I do a lot of restocking myself and the best advice I can give is to pick a shop and learn it! You can look the item up in the shop search to check the price before buying it to see if it is worth it to restock. Most items are going to be profitable.
The food shop is pretty profitable because the ingredients are used in a lot of baking recipes.
The shops restock right on the minute, so watch the clock.

I'm not that big of a restocker myself but hope I can be of help. My personal favourite is the Book Nook, specially for beginners, books are always on demand and most restocks have something rare, plus it's not just a bunch of recolours so it's easier to spot the good stuff. Also: you can find lots of books that gives you an ok profit but doesn't sell because isn't much for most restockers to bother; and if you are patient some prices fluctuate a lot so you might find some hidden gems.
Besides books, foods are also a safe bet, and then I recommend going for shops that has few but very VERY expensive items like Apocalyptic Apothecary after you get the hang of it. Although those things are actually scattered in many shops and it's a matter of searching. Last but not least if you have the time and patience shops like Spells Galore and battle ones (and Book Nook itself) have lots of quest items, so you can get a nice profit by buying a bunch of low rarity items.

Yeah, pretty much. To have an initial idea of what's good or not check SubetaLodge and see what are the rarest items - you can filter and organize by rarity and shop. Also whenever you see an item you feel you aren't familiar with check its price (or just blindly buy it to not take risks, some items just screams 'I'M RARE' anyway).
Subeta does price supports for rare items. If they fall below a certain sP amount in user shops, they no longer restock for awhile. If you are willing to be patient, then you can memorize which items are rare in the shop you are practicing in. You won't need to price check them because eventually the price will go back up.
