I cannot edit, add, or remove items from my shops...and when I click on "my shops", nothing is there. Help?

Shops were changed to a new system in April last year, and shops created before this time can't have items added to them anymore. The New Shop Guides have a lot of information about how to create a new shop, transfer items and shop till to the new shop, and the different things available with the new shop system.

All your old shops should have a caution sign next to their name, indicating that they're old shops that you can't add anything to anymore.
