I got 4 boxes of jiffy corn muffin mix..Only thing I know to make is corn bread.. I also have 4 cups of blueberries.. I have over 20 eggs. Is there a way I can make some kind of blueberry muffin?
I have no milk and no sour cream..I found this recipe muffin mix Can I just replace the milk with water and remove the sour cream?
I also have skinless boneless chicken breast. 1 pound of ground venison. 1 bag of dried northern beans(there white) Im running out of ideas.. I use a crockpot and a electric skillet.I have a oven but try and cut the use down to less than 20 minutes of use.It's gas powered and not cheap.
Ive been trying to make things ahead of time and freeze them for a quick meal. Im planing on buying some soft tortillas and some cheese to shred.I have 2 bags of pinto beans.Going to make refiled beans out of the pinto beans and make bean and cheese burritos and freeze them.

- You can definitely substitute water for the milk. The sour cream is just there for added creaminess, but isn't necessary. If you see the mix is too dry, add water 1/8 cups at a time. You might need to add that extra bit of water because of the lack of sour cream. If you need a reference point for the consistency for the mix, think of the consistency of corn bread mix by itself.
You could make cheese and venison quesadillas.
-Cook the venison first. -Put a tortilla in the skillet (temperature at low-medium). Then, put the shredded cheese on top of half of the tortilla. -Once the cheese is mostly melted, put the venison on top of the cheese and fold the tortilla. (Takes about 3-5 minutes for cheese to melt) -After about 10 seconds, take the quesadilla out of the skillet.
would that be freezer friendly? Trying to freeze as much as I can before I have surgery and I will be on crutches.So basically trying to freeze meals I can reheat in the microwave. made the muffins.sadly the texture is gritty..wonder if I should have put some butter.. had some mix left over so I poured it in a loaf pan.

- I don't think melted cheese would keep well in the freezer. What you could do is just cook the venison and then wait for it to cool down. Assemble the quesadilla without heating up the tortilla and cheese. That would be fine in the freezer and then the microwave would melt the cheese.
Yeah, some butter would have helped with the texture of the muffins. I wasn't sure if you had butter or not. :x
funny thing the mix in the bread pan was better than the muffins and it was the same mix.. Im going grocery shopping the 22nd.So for now im eating eggs,whatever I make out of all that jiffy mix ,potatoes,toast(got a toaster gave to me).
trying to put a grocery list together.Wish I had one of those small freezers that sit on the floor and you open the top and put your items in it.A bag of frozen chicken legs with thighs takes up top rack of my freezer.
I so wish everything wasn't so expensive..Ive had to to turn water off to my sink cause my ice maker is leaking somewhere and Ive got 0 clue on how to or if it can be shut off.The line runs to my sink so I shut the valve off to stop water from rotting my floor.I have a $200.00 electric bill cause of the leak.(I don't have a water bill my pump is electric.
