Is it possible to convert a gallery to a shop? Also, if I delete the gallery must I remove the tons of items in it or will the items go to my inventory or worse be deleted also?

No, you can't convert between the two. You would have to delete the gallery and make a shop instead.

And it tells you on the page to delete the gallery that you have to remove the items first or they will be deleted as well. Make sure you remove everything before deleting.
