Is there a list somewhere (either here or on subetalodge) where I can see which uncarved pumpkins give which carved pumpkins? I'm missing 61 pumpkins from years before I joined (my first Morostide was 2012, I believe), but I don't want to carve newer pumpkins because I still need the pumpkin deleter achievement as well.

If you check on SubetaLodge, they have a list of the carved pumpkins. You can see which uncarved pumpkin it comes from by checking the links for which ones you need.
