1. not sure if there's any tutorial sites specifically for subeta. it uses html and css, which is pretty easy to google and pick up.
2. No, galleries and shops are located in different tables now so this isn't done so easily.
3. css is what styles layouts on websites. the customcss here allows you to change things to make it how you like - moving things around, making certain things disappear etc. googling css is helpful. learn the different css selectors, that's a good place to start. if you have any specific questions, I can try to help.
