Am I doing something wrong? I had my zombie skin on earlier and was making stuff with tokens and tinctures, but despite having layer cards in my inventory, there is no option for me to select or see any layer cards at the alchemist. I feel like I'm probably overlooking something really obvious here, but I'd appreciate the help.

They only show up once you've selected the Wearable Token.

also make sure to have only one layer card in your Inventory at one time otherwise it'll glitch.
