I feel kind of stupid to ask this, but how do you keep track of how many dances you've had?

does it count when you ask? or when it's accepted? @

gotta keep track yourself, which is one reason I never do contests :P

[edit] if you haven't gotten the full dance with someone achievement, you could probably use that as a counter as long as you don't dance with anyone else

There's no official counter on-site. It should be in the rules of the contest whether or not you need to keep track, and how (one small contest I did yesterday asked that you edit your count into one post, the one I'm currently working on asks you to make a new post every time). But most do ask you to keep track yourself.

wow, so contests are pretty much honesty based? since I see some of them say to submit the number of dances you've had?

Yeah there's a lot of trust that goes into them. someone with trust issues should just avoid contests. usually they ask for you to post every x amount of dances or whatever, and they can actually count to see if you're telling the truth though that is very tedious and I doubt they do that for everyone.
