Being a single person on a tight budget, its not cost effect to spend money and time making myself a full tasty sunday dinner. I miss at times being in a big house with lots of people.

I mean, you could make a small Sunday dinner for yourself, just buy a small cut of meat from the deli counter at the supermarket, even if it's pre-cooked! Or even use your leftovers over the next day or two. Or invite your friends round for dinner and they could put a little money in!
But I know it's not always easy cooking for one, and a Sunday Roast is a total 'family' meal, based on size alone! Hope you satisfy your craving soon!

Sunday dinner for one can be done at a good cost if you are okay with leftovers. A cheap cut of meat can be turned on in the morning and left to roast or braise all day long on low until it's fall apart tender. Pop veg into a foil packet and season, then throw in the oven and roast. An hour usually works at 350. You can even make popovers or yorkshire really easily. Meat drippings turn into gravy. And then it feels like a fancy meal but it can be very cheap.
Going solo does make it hard, but its not impossible.
