How absolutely insane would this be to have her loadout be scrolls and only scrolls, given a sufficiently high AP? And if this can't be done, are there any brushes or writing utensils she could use as weapons?

As far as I'm aware, only you can see your weapons. So, it's only you that is going to see whether or not they fit with your lore. Unless you're looking for treasure chest items.
