Pre-Internet nerd thing. Canon refers to a a pairing, or event, in a show, book, series, movie, etc. that is confirmed.
For example, Joker and Harley, from Batman, are a canon ship. Batman and Joker is debatable, unless referring to the AU where Bruce died instead of his parents, who then became Batman and Joker instead.
For something less confusing, canon events of something is literally just. What happens in the media itself. The story, or chapters of it, are canon events and thus are not debatable unless referring to alternate universe happenings (also known as AU).
It's a phrase that's been around since at LEAST when Star Trek was first running, but it could be older. Hope that helps!
