I'm sorry if this was answered somewhere else, but I can't seem to find the answer...

The battle stats were reset recently, and I was able to fight all of the opponents that I could defeat for extra EXP and loot. Loved the stat reset because of this.

Was the stat reset a one time thing because of the cap being upped, or is this going to be an ongoing thing?

if by 'ongoing' you mean 'regular', then no. challenger resets usually happen pretty erratically.
