Is it ok to remove the part that says (X has a minion) but leave the minion along with it's name and type? And if so does anyone have code to do that?

You can do so, as long as you don't misrepresent (i.e. make sure your pet actually has that minion currently attached).

You can't, however, remove the text that says "X has a minion" and leave the rest. They are linked together. So your best bet is to remove the pet minion like this {display: none;}

Then create a new pet minion division with the minion image and text you want to use.
