There wasn't any general write anything you'd want us to know box on this, so I'm making one for me here. Anyone who has anything to add can certainly chime in.
Restocking and Vending are at odds. A lot of wears are vendable and a lot of vending happens to get wears. It isn't that I wouldn't restock wears, but the competition is too high to be as easily profitable.
(There's no reason that restockers should be favored over vendors or anyone else, and I'm not asking that they should.)
I totally agree with you regarding restocking and vending. I'll vend during events (or otherwise) to try to get particular items and then sell or frag all the stuff I don't want/need.
One thing that really irks me about the Main Shops is that all the new items are placed at the bottom of the page and if it's a huge restock you have to scroll through heaps of items just to (hopefully) find something you want before everyone else buys them up. Another thing that irks me is that there's never enough of each new item per restock and sometimes the wait between restocks is crazy.

I love restocking. It is my main income and I hope that does not change. And as to getting to the bottom of the page... press the "end" button or use f5 to refresh and that usually leaves you at the place you were on your page.
I don't really care about wearables so....
It depends on what the vending machines give out. I find the Blue Sky give like one third beanbags (which are so deflated it's unprofitable) and not very many books. If you're lucky you get a rare book worth 100k, and other times it's a cheap book that Book Nook has tons of. And also, Book Nook always has the same limited amount of books over and over again.
It a real mess to find what you want in the NPC shops. For questing, you use shop search so you'd rarely be in there anyways.
It is sorted by date created. It used to be alphabetical order I believe, but I am not sure why they changed it. Maybe because people complained they had a hard time finding new items. I restock so I know where items are located once they do restock.
I love restocking. Its my favorite thing to do on site. I'm actually sad I don't have time to restock for hours anymore. But I do love it. Its a challenge. Vending is not a challenge.
