Once my virus has finished progressing can I choose the 'normal' skin and still keep my virus's skin to go back to at any time?

Yes.

I always go double check the skin is "coloured" in the skins section of the beta wardrobe. If that's the case, then it's definitely unlocked, and you can return to activate it any time you want.
